Ingredients:
Sweet potato, peeled, steamed and mashed (500g)
Sugar (150g)
Tapioca flour (250g)
Corn flour or plain flour is also worked with this recipe, but corn flour is crunchier (30g)
Baking powder (1 tsp)
Salt (1/2 tsp)
1/4 cup milk (more or less depending on the mixture texture, maybe not use it at all)
Step 1: In a medium bowl, mix sugar, salt and baking powder together. Add flour and mix well until a dough forms.
Step 2: Divide dough into 2 portions and roll into a 1.5-inch thick log shape. Cut into 1-inch size pieces and roll into a ball.
Step 3: Heat the cooking oil using medium heat until hot. Fry the pandan leaves until fragrant then remove them.
Step 4: Add sweet potato and fry them until brown. Gently press the balls with a utensil to expand the balls and
increase the external crunch. Ready to serve!
