- 100g milk
- 55g cake flour
- 1g + 10g sugar
- 45g butter
- 3 eggs
- 100g whipping cream
1: Begin by preheating the oven to 200°C for 5 minutes.
2: In a pan, add in sugar, milk and 1g of sugar. Over low heat, melt the butter and bring to a boil.
3: Then, sift the flour and add it to the pan. Stir quickly until combined and turn off the heat.
4: Crack the eggs in a bowl and use a fork to beat. In 3 batches, add them to the pan and mix until they are fully absorbed.
5: Pour into a piping bag and set aside. Line baking sheet with baking paper and pipe the choux onto it. Dip finger in some water and push down the pointy part at the top of the choux.
6: Place the baking sheet into the oven and bake at 200°C for 15 minutes. Rotate the baking sheet and bake at 150°C for another 15 minutes.
7: Remove from the oven and let it cool on a wire rack.
8: Prepare the custard fillings by whipping together sugar and whipping cream until stiff peaks form.
9: To assemble the cream puff, use a knife to poke a small hole at the bottom of the puff. Then, pipe in the custard and it’s ready to be served!
